This meal is a sort of a fresh variation on fish and chips. The flavors work together in the same way, but because this is baked instead of fried it creates an opportunity for spices and cheese to become the focal point. The flounder is tender but with a crispy crust, and the potatoes are baked in milk, butter and spices so they have everything that makes mashed potatoes taste great but with a texture more like a baked potato.
