Lemon and Cream Cheese Layered Cake Recipe
This recipe walks the line between being a fresh lemon flavored cake and a tangy cheesecake. The layers are baked together so when it comes out of the oven all that’s left to do is to chill it and dust it with a little powdered sugar.
Ingredients:
2 cups flour
1 1/4 cups sugar + some for dusting
1 tsp salt
1 1/2 tsp baking powder
1/2 cup lemon juice
1/2 cup coconut oil or shortening
2 eggs
16 ounces of cream cheese
powdered sugar for dusting

Mix the dry ingredients together.
Add the wet ingredients and mix until well incorporated.
Oil and flour a baking pan. This is an 8 inch/20 cm springform – if you have a springform pan it’s a nice choice for this because the cake is not being frosted so it’s hard to hide any dings from pulling it out of the pan.
Pour half of the batter into the bottom of the pan.
Add a tablespoon or two of sugar and shake it around to cover.
Slice the cream cheese as best you can and make a layer over the batter. Dust this with sugar as well.
Pour the remaining batter over the top.
Bake for about an hour, until the top looks finished and the edges are lightly browned. Chill.
Serve dusted with powdered sugar.

- Bake at 350° for about 60 minutes until the top is baked and the edges are lightly browned.
- Chill.
- Serve sprinkled with powdered sugar.

- 5 mL salt
- 7 mL baking powder
- 125 mL lemon juice
- 125 mL coconut oil or shortening
- 2 eggs
- 500 mL cream cheese
- powdered sugar for dusting
Instructions
- Mix the flour, sugar, salt, and baking powder.
- Stir in the lemon juice, coconut oil, and eggs.
- Oil and flour a baking pan (ideally an 8 inch springform.)
- Spread half of the batter in the bottom of the pan.
- Sprinkle sugar over the batter.

- Sprinkle sugar over the cream cheese.
- Pour the rest of the batter over the cream cheese.
- Bake at 180° for about 60 minutes until the top is baked and the edges are lightly browned.
- Chill.
- Serve sprinkled with powdered sugar.
