Individual Serving Cheese Pie Recipe

This adaptation of a classic cheese and egg pie/tart is a delicious way to start your morning, show off at brunch or as a cozy dinner. This recipe is adjusted to make one serving, so it’s easy to make as many servings as you need for the number of people you’re serving.

Ingredients (per serving):

5 tbsp flour
2 tbsp cold butter
1-2 tbsp water
1 egg
1/4 cup diced cheese
1/8 – 1/4 cup diced onion
1 tbsp heavy cream
1/2 tsp dill
1/4 tsp salt
1/8 tsp pepper

The cheese I used is called ‘Ost Lagrad’ and is from Sweden. Swiss, Emmentaler, or Jarlsberg would all be similar enough to substitute, or you could experiment with anything that sounds tasty.

 

This recipe is also delicious with the addition of 1/4 cup diced potato.

 

Preheat the oven to 350°.

 

The oven safe ramekin shown holds about 10 ounces/300 mL.

Start with the flour, butter, and water.

Dice the butter and mix it with the flour.

Use a fork or pastry cutter to blend the butter and flour.

Add the water and continue mixing until it comes together as a dough. Use just enough water to collect up the flour.

Press the dough to form a shell in the ramekin.

Stab it with a fork so that it bakes properly. Without these holes air can be trapped between the dough and ramekin that misshapes the shell.

 

Bake the shell for about 15 minutes.

 

While the shell is baking mix together the filling.

Whisk together the egg and cream (I’m making enough for 2 servings in these pictures.)

Stir in the dill, salt, and pepper.

Add the onions (and potatoes, if you’re adding some.)

Gently stir in the cheese.

It may be tempting to put the cheese and onions into the shell and pour the egg over, but that results in a layer of cheese and onions topped with scrambled eggs, which just isn’t as good.

Pour the filling into the shell, then put it back in the oven for about 30 minutes.

Bake until it is set in the center.

  1. Blend the flour and butter until crumbled.
  2. Add enough water to turn it into a dough.
  3. Press the dough into the ramekin to form a shell.
  4. Puncture the shell with a fork.
  5. Bake at 350° for about 15 minutes.
  6. Whisk the egg and cream together.
  7. Mix in the dill, salt, and pepper.
  8. Stir in the onion and cheese.
  9. Pour the filling into the pre-baked shell.
  10. Bake for another 30 minutes or until the center is set.

Ingredients

  • 75 mL flour
  • 30 mL cold butter
  • 13-30 mL tbsp water
  • 1 egg
  • 60 mL cup diced cheese
  • 30-60 mL cup diced onion
  • 15 mL heavy cream
  • 2 mL dill
  • 1 mL tsp salt
  • .5 mL tsp pepper

Instructions

  1. Blend the flour and butter until crumbled.
  2. Add enough water to turn it into a dough.
  3. Press the dough into the ramekin to form a shell.
  4. Puncture the shell with a fork.
  5. Bake at 180° for about 15 minutes.
  6. Whisk the egg and cream together.
  7. Mix in the dill, salt, and pepper.
  8. Stir in the onion and cheese.
  9. Pour the filling into the pre-baked shell.
  10. Bake for another 30 minutes or until the center is set.
