Spiced Swedish Pancake Recipe
Swedish pancakes are part way between crepes and fluffy American pancakes.  Spiced Swedish Pancakes have the addition of cinnamon, nutmeg, and cardamom which is a great base for a peanut butter and maple syrup topping or the classic sugar and butter filling.  The basic Swedish Pancake recipe lends itself well to a variety of toppings/fillings. The core recipe calls for just a handful of basic ingredients and can easily be modified by adding a blend of spices.
Basic Swedish Pancake Recipe:
1 Egg
1 cup  Milk
1 tbs Vegetable Oil
1tbs Sugar
1 cup Flour
Pinch Salt
Cinnamon Spice Blend:
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/4tsp Cardamom
Yield:Â 6 pancakes (1/3 cup each) or 2 servings

Suggested Toppings/Fillings:
Peanut Butter & Maple Syrup
Butter & Sugar
Sweetened Cream Cheese
Vanilla Frosting

In a medium sized bowl, whisk the egg.
Add the milk and mix well.
Add the sugar, oil, and salt and whisk it together. If using spices, add these now also.
Add the flour a little bit at a time and blend together until smooth. It may need to sit for a minute for the flour to fully blend in.
Pour the batter onto a non-stick skillet or frying pan 1/3cup | 75mL at a time. Swirl the pan around to spread the batter out. When the top surface turns light brown check the underside to see if it is a nice medium brown. Flip the pancake over to cook on the other side until slightly brown.
Keep warm until all pancakes are cooked.
Serve them flat and add your topping.
Or roll them up with your filling inside.
