This meal is a sort of a fresh variation on fish and chips. The flavors work together in the same way, but because this is baked instead of fried it creates an opportunity for spices and cheese to become the focal point. The flounder is tender but with a crispy crust, and the potatoes are baked in milk, butter and spices so they have everything that makes mashed potatoes taste great but with a texture more like a baked potato. Swedish pancakes are part way between crepes and fluffy American pancakes.  Spiced Swedish Pancakes have the addition of cinnamon, nutmeg, and cardamom which is a great base for a peanut butter and maple syrup topping or the classic sugar and butter filling.  The basic Swedish Pancake recipe lends itself well to a variety of toppings/fillings. The core recipe calls for just a handful of basic ingredients and can easily be modified by adding a blend of spices.
